I made this for my family today. It was the best meatloaf we’ve ever eaten!! I definitely recommend NOT adding the cold water for the gravy. Just put it in the meat mixture dry. That is what I did, based on previous reviews saying it was mushy. Leaving out the cold water for the gravy packet did the trick. It was still super moist but not mushy. I used the cornbread stuffing mix and I added about a teaspoon each of onion powder and garlic powder. I used a meatloaf pan instead of using a bundt pan. It was not done after an hour so I put it back in for 30 more minutes. It came out perfect! This will be a regular meal in our home. 🙂

Best Ever Meatloaf with Brown Gravy. I could've sworn that I'd reviewed this before, but I guess not, so here goes. This is THE BEST meatloaf I've ever had. I made it exactly as written, and it was excellent, and I've also made some changes/tweaks over time. I use super lean beef (~90 to 95% lean), multi-grain bread (with sunflower seeds, flax seeds, and walnuts in it), lean center-cut bacon, and a mixture of light sour cream with a tablespoon or two of creme fraiche for the gravy. Instead of ketchup, I use A-1 steak sauce (the bold and spicy is especially good), and I usually use at least a cup or more of the mushrooms (I prefer cremini). It's absolutely one of our favorite dishes (and until this recipe, I didn't even like meatloaf). There are other tweaks I may try (like flourpower's suggestion of adding chopped bacon in the meat mix), but this is just a great recipe. Thanks, Irmgard, for a real winner.

Absolutely the best meatloaf recipe ever. I didn't saute the onions and garlic. Just threw everything together and put it in a loafpan as I didn't want to wrap it in the bacon. It took about 1.5 hours to get to the right internal temperature. The gravy was delicious as well. I used beef broth since I used all beef for the meat. Have given the recipe to many others since last weekend and even those that normally hate meatloaf have loved this one. It's on the menu again tonight for us. Will put in different types of mushrooms this time to change it up a bit but we are both salivating waiting for dinner time.
